This crisp slaw comes together quickly and works as a side for rice bowls, grilled foods, or a simple sandwich night.
Ingredients
- 4 cups thinly sliced green or red cabbage
- 2 medium carrots, shredded
- 1 small cucumber, thinly sliced
- 3 scallions, thinly sliced
- 1/2 cup chopped cilantro or parsley
- 2 tablespoons lime juice
- 1 tablespoon rice vinegar
- 1 tablespoon soy sauce
- 2 teaspoons toasted sesame oil
- 1 teaspoon honey
- 1 tablespoon toasted sesame seeds
Method
- Place the cabbage, carrot, cucumber, scallions, and herbs in a large bowl.
- Whisk the lime juice, rice vinegar, soy sauce, sesame oil, and honey in a small bowl.
