Weeknight Vegetable Slaw

Bright vegetable slaw with cabbage, carrot, cucumber, and herbs

This crisp slaw comes together quickly and works as a side for rice bowls, grilled foods, or a simple sandwich night.

Ingredients

  • 4 cups thinly sliced green or red cabbage
  • 2 medium carrots, shredded
  • 1 small cucumber, thinly sliced
  • 3 scallions, thinly sliced
  • 1/2 cup chopped cilantro or parsley
  • 2 tablespoons lime juice
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon honey
  • 1 tablespoon toasted sesame seeds

Method

  1. Place the cabbage, carrot, cucumber, scallions, and herbs in a large bowl.
  2. Whisk the lime juice, rice vinegar, soy sauce, sesame oil, and honey in a small bowl.
  3. Pour the dressing over the vegetables and toss well. Let the slaw stand for 10 minutes, then toss again.
  4. Sprinkle with sesame seeds and serve. Refrigerate leftovers in a covered container.
