Method

  1. Mix, knead, and rest the pasta dough, then roll it into sheets that fit your baking dish.

  3. Combine the ricotta with the egg and half of the Parmesan.
  4. Blanch the pasta sheets briefly if they feel thick, then cool them on towels.
  5. Layer sauce, pasta, ricotta mixture, mozzarella, and Parmesan until the pan is full, finishing with sauce and cheese.
  6. Cover and bake at 375 F for 30 minutes, uncover, and bake 15 to 20 minutes more until browned.
  7. Rest for 20 minutes before slicing.

Troubleshooting

  • If the layers slide, reduce the sauce slightly longer before assembling.
  • If the top browns too quickly, cover loosely with foil for the remainder of the bake.
